Beet, Apple & Kale Salad


  1. 6 medium sized beets, peeled and sliced
  2. 1 bunch Lacinato Kale, cleaned & chopped
  3. 1-2 cups of water (for steaming kale)
  4. 1 Apple, cored and finely chopped
  5. 1 tbsp. Olive Oil
  6. 2 tbsp. Balsamic Vinegar
  7. 1 tsp. Dried Oregano
  8. 2 tbsp. Tamari
  9. 1 pinch Sea Salt
  10. 1 pinch Fresh Black Pepper, ground
  11. 2 oz. Feta Cheese, diced


  1. Preheat oven to 375°. Lightly coat beets with olive oil, sea salt, and oregano
  2. Place into a large baking dish, cover, and roast 45 minutes to an hour or until easily pierced with fork. Remove beets from oven. Steam kale leave until slightly soft (5-7 minutes)
  3. In a large bowl, combine apple, beets, and kale. Whisk together 2 tablespoons olive oil, vinegar, a pinch of oregano, ea salt, and black pepper to taste.
    Mix dressing into salad. Garnish with feta cheese.Recipe adapted from
